Baked Almond Soufflé

Ingredients

  • 4 eggs
  • 3 oz castor sugar
  • 4 oz ground sweet almonds
  • 0.5 oz ground bitter almonds

Method

  1. 1 Whip egg whites to stiff peaks and lightly mix with well-beaten yolks.
  2. 2 Gradually add sugar and ground almonds to the egg mixture.
  3. 3 Pour into a well-buttered pie dish, filling no more than three-quarters full.
  4. 4 Bake in a moderately hot oven (425°F) until a knife inserted comes out clean.
  5. 5 Turn out onto a plate and serve cold.
