Baked Almond Soufflé
Ingredients
- 4 eggs
- 3 oz castor sugar
- 4 oz ground sweet almonds
- 0.5 oz ground bitter almonds
Method
- 1 Whip egg whites to stiff peaks and lightly mix with well-beaten yolks.
- 2 Gradually add sugar and ground almonds to the egg mixture.
- 3 Pour into a well-buttered pie dish, filling no more than three-quarters full.
- 4 Bake in a moderately hot oven (425°F) until a knife inserted comes out clean.
- 5 Turn out onto a plate and serve cold.
