Baked Almond Meringue Cookies
Ingredients
- 1 lb blanched almonds, sliced
- 1 lb fine sugar
- 3 egg whites
- Flour for dusting plates
- Wafer cookies
- Sugar for sprinkling
Method
- 1 Soak almonds overnight, then blanch and slice them. Beat 1 lb of fine sugar finely.
- 2 Mingle almonds and sugar. Beat 3 egg whites to stiff peaks and mix well into the almond-sugar blend.
- 3 Dust plates with flour. Place a wafer on each plate, then mound the almond mixture on top, shaping it round with edges upright.
- 4 Sprinkle lightly with sugar. Bake in a moderate oven (350°F) until the edges are lightly colored, about 10-15 minutes.
- 5 Remove from oven and let cool on the plates until set. Store in an airtight container.
