Baked Almond Custard Tart
Ingredients
- 1/2 lb sweet almonds
- 4 bitter almonds
- 2 tbsp orange flower water
- 2 tbsp rose water
- 4 grated Naples biscuits
- 1/2 lb melted butter
- 8 eggs
- 1 pint cream
- 1/2 nutmeg, grated
- 1/4 lb sugar
- pastry for dish bottom
Method
- 1 Blanch 1/2 lb sweet almonds and 4 bitter almonds.
- 2 Pound almonds in a mortar with 2 tbsp orange flower water and 2 tbsp rose water.
- 3 Mix in 4 grated Naples biscuits and 1/2 lb melted butter.
- 4 Beat 8 eggs and mix with 1 pint boiled cream.
- 5 Grate in 1/2 nutmeg and 1/4 lb sugar; mix all well together.
- 6 Pour into a dish lined with pastry and bake.
