Baked Almond Custard Tart

Ingredients

  • 1/2 lb sweet almonds
  • 4 bitter almonds
  • 2 tbsp orange flower water
  • 2 tbsp rose water
  • 4 grated Naples biscuits
  • 1/2 lb melted butter
  • 8 eggs
  • 1 pint cream
  • 1/2 nutmeg, grated
  • 1/4 lb sugar
  • pastry for dish bottom

Method

  1. 1 Blanch 1/2 lb sweet almonds and 4 bitter almonds.
  2. 2 Pound almonds in a mortar with 2 tbsp orange flower water and 2 tbsp rose water.
  3. 3 Mix in 4 grated Naples biscuits and 1/2 lb melted butter.
  4. 4 Beat 8 eggs and mix with 1 pint boiled cream.
  5. 5 Grate in 1/2 nutmeg and 1/4 lb sugar; mix all well together.
  6. 6 Pour into a dish lined with pastry and bake.
