Baked Almond Custard Pudding
Ingredients
- 2.5 oz butter
- 0.25 lb sifted flour
- 1.5 cups cream or rich milk
- 1.5 oz sugar
- 3 heaping tbsp blanched and chopped almonds
- Vanilla to flavor
- 5 well beaten eggs
- Butter and dried sifted bread crumbs for greasing
Method
- 1 Melt butter in a saucepan. Stir in flour and cream/milk. Cook until mixture no longer sticks to the pan sides.
- 2 Remove from heat and let cool slightly. Stir in sugar, chopped almonds, and vanilla.
- 3 Mix in beaten eggs one at a time until combined.
- 4 Pour into a buttered mold sprinkled with bread crumbs. Place in a pan of hot water.
- 5 Cover and bake in a moderate oven (350°F) for about 45 minutes. Serve hot with sauce.
