Baked Almond Custard Pudding

Ingredients

  • 2.5 oz butter
  • 0.25 lb sifted flour
  • 1.5 cups cream or rich milk
  • 1.5 oz sugar
  • 3 heaping tbsp blanched and chopped almonds
  • Vanilla to flavor
  • 5 well beaten eggs
  • Butter and dried sifted bread crumbs for greasing

Method

  1. 1 Melt butter in a saucepan. Stir in flour and cream/milk. Cook until mixture no longer sticks to the pan sides.
  2. 2 Remove from heat and let cool slightly. Stir in sugar, chopped almonds, and vanilla.
  3. 3 Mix in beaten eggs one at a time until combined.
  4. 4 Pour into a buttered mold sprinkled with bread crumbs. Place in a pan of hot water.
  5. 5 Cover and bake in a moderate oven (350°F) for about 45 minutes. Serve hot with sauce.
