Baked Almond Bread Pudding

Ingredients

  • 1 pint milk
  • 1 cinnamon stick (4 inches long)
  • 12 blanched and sliced almonds
  • Thin rind of 1 lemon
  • Sugar to taste
  • 3 eggs
  • Allinson wholemeal bread slices, crusts removed
  • 2 oz butter

Method

  1. 1 Boil milk with sugar, cinnamon stick, and almonds. Remove cinnamon stick.
  2. 2 Let milk cool slightly, then carefully whisk in well-beaten eggs.
  3. 3 Pour mixture into a wide, shallow pie dish.
  4. 4 Butter both sides of bread slices. Cover the milk mixture entirely with bread.
  5. 5 Bake in a moderate oven (350°F) for about 45 minutes.
