Baked Almond Bread Pudding
Ingredients
- 1 pint milk
- 1 cinnamon stick (4 inches long)
- 12 blanched and sliced almonds
- Thin rind of 1 lemon
- Sugar to taste
- 3 eggs
- Allinson wholemeal bread slices, crusts removed
- 2 oz butter
Method
- 1 Boil milk with sugar, cinnamon stick, and almonds. Remove cinnamon stick.
- 2 Let milk cool slightly, then carefully whisk in well-beaten eggs.
- 3 Pour mixture into a wide, shallow pie dish.
- 4 Butter both sides of bread slices. Cover the milk mixture entirely with bread.
- 5 Bake in a moderate oven (350°F) for about 45 minutes.
