Bacon Wrapped Stuffed Salmon
Ingredients
- 1 small salmon, cleaned and scaled
- 1/2 loaf stale bread, moistened with hot water
- 1/4 cup butter
- Salt and pepper to taste
- 1/2 cup capers
- 1 egg, beaten
- Thin slices of bacon
- Fresh mushrooms, chopped
- Bouillon
- Small fresh tomatoes
Method
- 1 Mix moistened bread, butter, salt, pepper, and capers. Bind the mixture with the beaten egg.
- 2 Stuff the salmon with the bread mixture. Place on a baking rack in a very hot oven (425°F).
- 3 Cover the salmon with bacon slices. Bake until the fish is cooked through.
- 4 Sauté chopped mushrooms in a little bouillon. Serve the salmon on a bed of mushrooms and garnish with fresh tomatoes.
