Bacon Wrapped Stuffed Salmon

Ingredients

  • 1 small salmon, cleaned and scaled
  • 1/2 loaf stale bread, moistened with hot water
  • 1/4 cup butter
  • Salt and pepper to taste
  • 1/2 cup capers
  • 1 egg, beaten
  • Thin slices of bacon
  • Fresh mushrooms, chopped
  • Bouillon
  • Small fresh tomatoes

Method

  1. 1 Mix moistened bread, butter, salt, pepper, and capers. Bind the mixture with the beaten egg.
  2. 2 Stuff the salmon with the bread mixture. Place on a baking rack in a very hot oven (425°F).
  3. 3 Cover the salmon with bacon slices. Bake until the fish is cooked through.
  4. 4 Sauté chopped mushrooms in a little bouillon. Serve the salmon on a bed of mushrooms and garnish with fresh tomatoes.
