Bacon Wrapped Squab With Sweet Potatoes

  • shortening
  • flour
  • hot water
  • bacon strips
  • sweet potatoes
  • butter
  • cinnamon
  • brown sugar

Method

  1. 1 Split the squab down the back, draw, wash, and remove the breast bone.
  2. 2 Place in a baking pan, rub with shortening, dust lightly with flour, and bake in a hot oven (425°F) for 35 minutes, basting frequently with hot water.
  3. 3 Transfer the squab to a hot plank. Cover with strips of bacon.
  4. 4 Split sweet potatoes and place on each corner of the plank. Brush with butter, dust with cinnamon and brown sugar, and brown in a hot oven (425°F) for 12 minutes.
