Bacon Wrapped Squab With Sweet Potatoes
Ingredients
- 1 squab
- shortening
- flour
- hot water
- bacon strips
- sweet potatoes
- butter
- cinnamon
- brown sugar
Method
- 1 Split the squab down the back, draw, wash, and remove the breast bone.
- 2 Place in a baking pan, rub with shortening, dust lightly with flour, and bake in a hot oven (425°F) for 35 minutes, basting frequently with hot water.
- 3 Transfer the squab to a hot plank. Cover with strips of bacon.
- 4 Split sweet potatoes and place on each corner of the plank. Brush with butter, dust with cinnamon and brown sugar, and brown in a hot oven (425°F) for 12 minutes.
