Bacon Wrapped Roasted Quail
Ingredients
- quails
- thin slice of pork or bacon per bird
- butter
- hot water
- salt
- pepper
- toast slices
Method
- 1 Draw, wipe inside and out with a damp cloth, and truss the quails with legs standing up.
- 2 Tie a thin slice of pork or bacon around each bird.
- 3 Place in a hot oven (425°F) with butter, hot water, salt, and pepper in the pan.
- 4 Baste frequently and bake for 15 to 20 minutes.
- 5 Serve on toast slices moistened with pan juices.
