Bacon Wrapped Roasted Quail

Ingredients

  • quails
  • thin slice of pork or bacon per bird
  • butter
  • hot water
  • salt
  • pepper
  • toast slices

Method

  1. 1 Draw, wipe inside and out with a damp cloth, and truss the quails with legs standing up.
  2. 2 Tie a thin slice of pork or bacon around each bird.
  3. 3 Place in a hot oven (425°F) with butter, hot water, salt, and pepper in the pan.
  4. 4 Baste frequently and bake for 15 to 20 minutes.
  5. 5 Serve on toast slices moistened with pan juices.
