Bacon Wrapped Roast Duck
Ingredients
- Salt
- Bacon slices, large and thin
- Oil
- Butter (optional, for wild duck)
Method
- 1 Salt the inside of the duck and bandage the breast with slices of bacon.
- 2 Grease the duck with oil. If using wild duck, use butter instead as the meat is drier.
- 3 Roast the duck. Add moderate salt when cooking is almost complete.
