Bacon Wrapped Roast Duck

Ingredients

  • Salt
  • Bacon slices, large and thin
  • Oil
  • Butter (optional, for wild duck)

Method

  1. 1 Salt the inside of the duck and bandage the breast with slices of bacon.
  2. 2 Grease the duck with oil. If using wild duck, use butter instead as the meat is drier.
  3. 3 Roast the duck. Add moderate salt when cooking is almost complete.
