Bacon Wrapped Roast Chicken With Wine Sauce

Ingredients

  • 1 whole chicken, trussed
  • strips of bacon
  • chicken stock
  • white wine
  • fresh vegetables
  • butter

Method

  1. 1 Truss the chicken and cover the breast with strips of bacon.
  2. 2 Place the chicken in a deep, thick saucepan and brown in a 350°F oven.
  3. 3 Transfer the chicken to a casserole when nearly done.
  4. 4 Moisten with chicken stock and a little white wine; use for basting.
  5. 5 Add bouquets of fresh vegetables in individual heaps a few minutes before serving.
  6. 6 Serve with a sauce or an addition of butter, carving in sight of guests.
