Bacon Wrapped Roast Chicken With Wine Sauce
Ingredients
- 1 whole chicken, trussed
- strips of bacon
- chicken stock
- white wine
- fresh vegetables
- butter
Method
- 1 Truss the chicken and cover the breast with strips of bacon.
- 2 Place the chicken in a deep, thick saucepan and brown in a 350°F oven.
- 3 Transfer the chicken to a casserole when nearly done.
- 4 Moisten with chicken stock and a little white wine; use for basting.
- 5 Add bouquets of fresh vegetables in individual heaps a few minutes before serving.
- 6 Serve with a sauce or an addition of butter, carving in sight of guests.
