Bacon Wrapped Rabbit With Parsley Mushroom Stuffing
Ingredients
- 1 cup parsley, minced
- 1 cup mushrooms, minced
- 1 shallot, minced
- 1 clove garlic, minced
- 2 slices bacon, minced
- Salt and pepper to taste
- 2 tablespoons gravy
- 1 rabbit, cut into fillets and joints
- Thin slices of fat bacon
- Oiled parchment paper
Method
- 1 Mince parsley, mushrooms, shallot, garlic, and bacon. Season with salt and pepper.
- 2 Mix the minced ingredients with gravy on the stove to form a thick paste.
- 3 Cover each rabbit fillet and joint with the paste, then wrap with a thin slice of fat bacon.
- 4 Place each piece in an oiled parchment paper packet.
- 5 Cook slowly in a 300°F oven until tender, then serve in the papers.
