Bacon Wrapped Broiled Quail

Ingredients

  • 2 quails, split and flattened
  • 1 tbsp sweet oil
  • Salt and pepper to taste
  • 1-2 bay leaves
  • 4-6 slices bacon or ham
  • 2 tbsp grated breadcrumbs
  • 2 tbsp warm water

Method

  1. 1 Place quails in a stew-pan with sweet oil, salt, pepper, and bay leaves.
  2. 2 Cover with bacon slices and stew slowly on hot coals until nearly done.
  3. 3 Remove quails, sprinkle with breadcrumbs, and broil on a gridiron.
  4. 4 Add warm water to the pan, scrape up browned bits, skim, and boil.
  5. 5 Pour gravy into serving dish, arrange quails, and place bacon around.
