Bacon Wrapped Broiled Quail
Ingredients
- 2 quails, split and flattened
- 1 tbsp sweet oil
- Salt and pepper to taste
- 1-2 bay leaves
- 4-6 slices bacon or ham
- 2 tbsp grated breadcrumbs
- 2 tbsp warm water
Method
- 1 Place quails in a stew-pan with sweet oil, salt, pepper, and bay leaves.
- 2 Cover with bacon slices and stew slowly on hot coals until nearly done.
- 3 Remove quails, sprinkle with breadcrumbs, and broil on a gridiron.
- 4 Add warm water to the pan, scrape up browned bits, skim, and boil.
- 5 Pour gravy into serving dish, arrange quails, and place bacon around.
