Bacon Vinaigrette Potato Salad
Ingredients
- 2 slices bacon
- 2 tablespoons vinegar
- 6 potatoes
- Lettuce leaves
- Salt and pepper
- Chopped parsley
- Sausage (for serving)
Method
- 1 Fry bacon slices in a pan until the fat is rendered and bacon is crisp.
- 2 Add vinegar to the hot bacon fat in the pan.
- 3 Slice 6 hot potatoes and arrange them on a platter lined with lettuce leaves.
- 4 Pour the bacon fat and vinegar mixture over the potatoes.
- 5 Season with salt and pepper, sprinkle with chopped parsley, and serve with sausage.
