Bacon, Tomato, And Onion Braised String Beans
Ingredients
- 4 slices bacon
- 1 quart string beans
- 3 medium onions, sliced
- 2 cups tomatoes, chopped
- 1 tsp salt
- ¼ tsp pepper
- 1 cup hot water
Method
- 1 Dice the bacon and fry until crisp.
- 2 Slice the onions and fry until soft.
- 3 Cut the beans into 1-inch pieces and brown them slightly with the bacon and onions.
- 4 Add the tomatoes, seasoning, and boiling water. Cover and cook very slowly until beans are tender.
- 5 Add water if necessary so there is a little sauce to serve with the beans.
