Bacon Stuffed Twice Baked Potatoes
Ingredients
- large potatoes
- shortening
- milk
- salt
- pepper
- 1 tablespoon butter per potato
- bacon strips
- paprika
Method
- 1 Wax and grease potatoes with shortening. Bake in oven or broiler until done.
- 2 Cut a slice from the top. Scoop out contents into a bowl.
- 3 Mash potatoes. Add milk, salt, pepper, and 1 tbsp butter per potato. Beat until light and fluffy.
- 4 Fill potato skins back up, piling high. Place a strip of bacon on top.
- 5 Bake in a hot oven (425°F) to brown bacon. Dust with paprika and serve.
