Bacon Stuffed Twice Baked Potatoes

Ingredients

  • large potatoes
  • shortening
  • milk
  • salt
  • pepper
  • 1 tablespoon butter per potato
  • bacon strips
  • paprika

Method

  1. 1 Wax and grease potatoes with shortening. Bake in oven or broiler until done.
  2. 2 Cut a slice from the top. Scoop out contents into a bowl.
  3. 3 Mash potatoes. Add milk, salt, pepper, and 1 tbsp butter per potato. Beat until light and fluffy.
  4. 4 Fill potato skins back up, piling high. Place a strip of bacon on top.
  5. 5 Bake in a hot oven (425°F) to brown bacon. Dust with paprika and serve.
