Bacon Stuffed Green Peppers

Ingredients

  • 6 large green peppers
  • 4 tablespoons shortening
  • 4 onions, minced
  • 2 ounces bacon, diced and cooked
  • 1 ½ cups fine bread crumbs
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • ½ teaspoon thyme
  • ¾ cup milk
  • 1 egg, well-beaten
  • ½ cup water
  • 6 strips bacon

Method

  1. 1 Cut a slice from the top of each pepper, remove seeds, and soak in cold water.
  2. 2 Cook minced onions in shortening until tender but not brown.
  3. 3 Mix onions, cooked bacon, bread crumbs, salt, paprika, thyme, milk, and egg in a bowl.
  4. 4 Fill peppers with the mixture and place in a greased baking pan.
  5. 5 Add water to the pan and bake at 350°F for 40 minutes.
  6. 6 Top each pepper with a strip of bacon and bake 5 more minutes until browned.
