Bacon Stuffed Green Peppers
Ingredients
- 6 large green peppers
- 4 tablespoons shortening
- 4 onions, minced
- 2 ounces bacon, diced and cooked
- 1 ½ cups fine bread crumbs
- 2 teaspoons salt
- 1 teaspoon paprika
- ½ teaspoon thyme
- ¾ cup milk
- 1 egg, well-beaten
- ½ cup water
- 6 strips bacon
Method
- 1 Cut a slice from the top of each pepper, remove seeds, and soak in cold water.
- 2 Cook minced onions in shortening until tender but not brown.
- 3 Mix onions, cooked bacon, bread crumbs, salt, paprika, thyme, milk, and egg in a bowl.
- 4 Fill peppers with the mixture and place in a greased baking pan.
- 5 Add water to the pan and bake at 350°F for 40 minutes.
- 6 Top each pepper with a strip of bacon and bake 5 more minutes until browned.
