Bacon Larded Braised Veal Cutlets
Ingredients
- veal cutlets
- bacon strips
- butter
- clear stock
- onion, chopped
- carrot, chopped
- turnip, chopped
- string beans
Method
- 1 Trim and clean the veal cutlets. Lard them by inserting thin strips of bacon into the meat.
- 2 Brown the cutlets in a little butter in a skillet.
- 3 Add clear stock and chopped onion, carrot, and turnip to season.
- 4 Simmer until the veal is done. Drain and serve with string beans.
