Ingredients

  • veal cutlets
  • bacon strips
  • butter
  • clear stock
  • onion, chopped
  • carrot, chopped
  • turnip, chopped
  • string beans

Method

  1. 1 Trim and clean the veal cutlets. Lard them by inserting thin strips of bacon into the meat.
  2. 2 Brown the cutlets in a little butter in a skillet.
  3. 3 Add clear stock and chopped onion, carrot, and turnip to season.
  4. 4 Simmer until the veal is done. Drain and serve with string beans.
