Bacon Fat Griddle Potato Pancakes
Ingredients
- 3 slices bacon, minced
- 3 tablespoons bacon fat
- 1 egg
- ¾ cup milk
- 1 ½ cups flour
- ¾ cup grated potatoes
- 4 teaspoons baking powder
Method
- 1 Cook minced bacon in a pan until nicely browned.
- 2 In a mixing bowl, combine bacon fat, egg, milk, flour, grated potatoes, and baking powder. Beat hard to thoroughly mix.
- 3 Fry the batter in hot fat on a griddle until golden brown.
