Bacon Fat Giblet Gravy

Ingredients

  • Giblets, minced
  • 2 tbsp bacon fat
  • 2 tbsp flour
  • 1 quart water

Method

  1. 1 Mince the giblets finely.
  2. 2 Brown the giblets in bacon fat, then stir in flour and brown well.
  3. 3 Add water and cook slowly for 1.5 hours while the fowl roasts.
  4. 4 Rub the mixture through a sieve, return to heat, and bring to a boil before serving.
