Bacon Corn And Potato Chowder

Ingredients

  • 4 slices bacon
  • 2 tbsp onion, minced
  • 1 tbsp celery, minced
  • 1 tbsp pepper, minced
  • 2 cups corn
  • 2 potatoes, diced
  • 2 tomatoes, cut up
  • 2 pints milk
  • salt and pepper to taste

Method

  1. 1 Dice bacon and brown in a pan. Add onion, celery, and pepper; fry until bacon is crisp.
  2. 2 Add corn and sauté together for 3 minutes.
  3. 3 Add potatoes, tomatoes, and seasoning. Cover and simmer for 30 minutes.
  4. 4 Add milk, heat to boiling point, and serve with chopped parsley.
