Bacon And Watercress Salad With Hard Boiled Eggs
Ingredients
- 5 strips bacon, diced
- 1/2 tsp mustard
- 1/2 tsp sugar
- 1 tsp salt
- 1/2 tsp paprika
- 4 tbsp vinegar
- Watercress
- Hard-boiled eggs, sliced
Method
- 1 Dice bacon and brown in a frying pan. Remove bacon and drain fat, leaving about 5 tablespoons.
- 2 In a cup, mix mustard, sugar, salt, paprika, and vinegar. Pour this mixture into the hot fat in the pan and bring to a boil.
- 3 Add the cooked bacon back into the hot dressing. Place watercress in a bowl and pour the hot bacon and dressing over it.
- 4 Toss gently to mix and garnish with sliced hard-boiled eggs before serving.
