Bacon And Sweet Potato Cakes
Ingredients
- 2 cups mashed sweet potatoes
- 2 tablespoons butter
- 2 tablespoons finely minced parsley
- 2 tablespoons finely minced red pepper
- 6 strips bacon, minced fine and browned
- flour for rolling
Method
- 1 Cook, peel, and mash sweet potatoes until you have 2 cups.
- 2 In a bowl, combine mashed potatoes, butter, minced parsley, minced red pepper, and browned minced bacon.
- 3 Mold the mixture into flat cakes.
- 4 Roll each cake in flour.
- 5 Brown the cakes in the reserved hot bacon fat.
