Bacon And Lettuce Salad
Ingredients
- 6-8 slices tender bacon
- 3 egg yolks
- 1/4 tsp paprika
- 1/4 tsp mustard
- 1 head lettuce
- 2 tbsp vinegar or lemon juice
Method
- 1 Cut bacon into small squares and fry until delicately browned. Drain on paper towels.
- 2 Heat 6 tbsp bacon fat and 2 tbsp vinegar in a bowl over hot water. Whisk in egg yolks, paprika, and mustard until mixture thickens slightly. Let cool.
- 3 Cut lettuce into narrow ribbons. Toss lettuce and bacon with the cooled dressing. Serve immediately.
