Bacon And Cabbage Vegetable Soup
Ingredients
- 1 piece bacon
- 2 gallons water
- 1 cabbage, kale, greens, or sprouts, washed and split
- 1 parsnip, chopped
- 1 carrot, chopped
- Pepper to taste
- Slices of bread
Method
- 1 Place bacon in a pot with water and bring to a boil. Skim well.
- 2 Add cabbage (or greens/sprouts), parsnips, and carrots to the pot.
- 3 Season with pepper only. Simmer gently for about two hours.
- 4 Remove bacon and some vegetables. Pour broth into a bowl with bread slices.
- 5 Serve soup first, then top with the reserved bacon and vegetables.
