Bacon And Bean Soup
Ingredients
- 2 cups beans
- 2 tablespoons finely cut onion
- 2 tablespoons finely cut bacon
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons chopped parsley
- 1 teaspoon thyme
- 3 tablespoons flour
Method
- 1 Soak beans in water overnight. Drain and place in a saucepan with six cups of boiling water. Boil slowly for two hours or until soft.
- 2 Fry the onion and bacon until light brown. Add them to the beans and boil for five minutes.
- 3 Stir in salt, pepper, parsley, and thyme. Mash the beans with the back of a spoon.
- 4 Mix flour with a little cold water to form a slurry. Stir into the soup and boil for five minutes before serving.
