Bacon And Bean Soup

Ingredients

  • 2 cups beans
  • 2 tablespoons finely cut onion
  • 2 tablespoons finely cut bacon
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons chopped parsley
  • 1 teaspoon thyme
  • 3 tablespoons flour

Method

  1. 1 Soak beans in water overnight. Drain and place in a saucepan with six cups of boiling water. Boil slowly for two hours or until soft.
  2. 2 Fry the onion and bacon until light brown. Add them to the beans and boil for five minutes.
  3. 3 Stir in salt, pepper, parsley, and thyme. Mash the beans with the back of a spoon.
  4. 4 Mix flour with a little cold water to form a slurry. Stir into the soup and boil for five minutes before serving.
