Avocado Stuffed With Black Bean Salsa
Ingredients
- 1 ripe, fresh avocado, halved, pitted and peeled
- 1/3 cup black beans
- 2 tablespoons tomato, diced
- 1 tablespoon onion, diced
- 1/2 teaspoon lemon juice
Method
- 1 In a bowl, combine black beans, diced tomatoes, and diced onion.
- 2 Squeeze in fresh lemon juice and stir to combine.
- 3 Spoon the mixture into the avocado halves and serve immediately.
