Avocado Egg Bruschetta With Ricotta
Ingredients
- 2 ripe avocados
- 1 medium tomato
- 1/2 cup chopped green onion
- 4 tbsp chopped fresh basil, plus 2 tbsp for garnish
- 12 hard-boiled eggs, peeled and chopped
- 1/4 cup sliced whole-wheat baguette bread
- Ricotta cheese (reduced-fat)
- Cracked black pepper to taste
Method
- 1 Dice the avocados, tomato, and green onions. Peel and chop the hard-boiled eggs.
- 2 In a small bowl, gently toss the avocados, tomato, green onions, eggs, and 4 tbsp basil. Season with cracked black pepper to taste.
- 3 Toast the baguette slices until golden.
- 4 Smear the toasted bread with reduced-fat ricotta cheese.
- 5 Top the ricotta with the avocado mixture and garnish with the remaining 2 tbsp chopped basil.
