Avocado Egg Bruschetta With Ricotta

Ingredients

  • 2 ripe avocados
  • 1 medium tomato
  • 1/2 cup chopped green onion
  • 4 tbsp chopped fresh basil, plus 2 tbsp for garnish
  • 12 hard-boiled eggs, peeled and chopped
  • 1/4 cup sliced whole-wheat baguette bread
  • Ricotta cheese (reduced-fat)
  • Cracked black pepper to taste

Method

  1. 1 Dice the avocados, tomato, and green onions. Peel and chop the hard-boiled eggs.
  2. 2 In a small bowl, gently toss the avocados, tomato, green onions, eggs, and 4 tbsp basil. Season with cracked black pepper to taste.
  3. 3 Toast the baguette slices until golden.
  4. 4 Smear the toasted bread with reduced-fat ricotta cheese.
  5. 5 Top the ricotta with the avocado mixture and garnish with the remaining 2 tbsp chopped basil.
