Avocado Chickpea Pita Pockets

Ingredients

  • 1 ripe avocado, halved, pitted, peeled, and diced
  • 2 whole grain pita bread pockets, cut in half
  • 1/4 cup canned chickpeas, rinsed and drained
  • 2 tablespoons crumbled Cotija or Feta cheese
  • Salt and pepper, to taste

Method

  1. 1 Halve the pita pockets and fill each half with diced avocado, chickpeas, and crumbled cheese.
  2. 2 Heat in the microwave for 15 to 20 seconds if desired.
  3. 3 Season with salt and pepper to taste before serving.
