Avocado Chickpea Pita Pockets
Ingredients
- 1 ripe avocado, halved, pitted, peeled, and diced
- 2 whole grain pita bread pockets, cut in half
- 1/4 cup canned chickpeas, rinsed and drained
- 2 tablespoons crumbled Cotija or Feta cheese
- Salt and pepper, to taste
Method
- 1 Halve the pita pockets and fill each half with diced avocado, chickpeas, and crumbled cheese.
- 2 Heat in the microwave for 15 to 20 seconds if desired.
- 3 Season with salt and pepper to taste before serving.
