Asparagus And Herb Omelette
Ingredients
- 3 eggs, beaten
- 2 oz butter
- 1 small onion, chopped
- 1 handful sorrel, chopped
- 1 handful mint, chopped
- 1 handful parsley, chopped
- 1 handful marjoram, chopped
- 1 handful asparagus, cut up
- Salt and pepper to taste
- Grated cheese
Method
- 1 Chop the sorrel, onion, mint, parsley, and marjoram.
- 2 Melt butter in a skillet and fry the chopped herbs and onion.
- 3 Add the cut-up asparagus, salt, and pepper; cook briefly.
- 4 Pour in the beaten eggs and grated cheese.
- 5 Cook until set to make an omelette.
