Ingredients

  • 3 eggs, beaten
  • 2 oz butter
  • 1 small onion, chopped
  • 1 handful sorrel, chopped
  • 1 handful mint, chopped
  • 1 handful parsley, chopped
  • 1 handful marjoram, chopped
  • 1 handful asparagus, cut up
  • Salt and pepper to taste
  • Grated cheese

Method

  1. 1 Chop the sorrel, onion, mint, parsley, and marjoram.
  2. 2 Melt butter in a skillet and fry the chopped herbs and onion.
  3. 3 Add the cut-up asparagus, salt, and pepper; cook briefly.
  4. 4 Pour in the beaten eggs and grated cheese.
  5. 5 Cook until set to make an omelette.
