Asparagus And Egg Scramble With Brown Gravy
Ingredients
- 1 bunch asparagus
- 4 large eggs
- 1 pinch salt
- 1 pinch black pepper
- 2 oz butter
Method
- 1 Boil the asparagus until tender, then drain and chop the green tips into very small pieces.
- 2 Whisk the eggs with salt and pepper in a bowl, then fold in the chopped asparagus.
- 3 Melt butter in a skillet over medium heat, pour in the egg mixture, and stir until thickened.
- 4 Fold the omelet in half and serve immediately with clear brown gravy.
