Arugula Blueberry Cucumber Salad With Feta
Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 2 tablespoons white balsamic vinegar
- 1 tablespoon lime juice
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup fresh blueberries
- 1 medium cucumber, cut into small chunks
- 4 cups fresh arugula
- 1/4 medium red onion, thinly sliced
- 1/4 cup crumbled reduced-fat feta cheese
- 2 tablespoons coarsely chopped toasted walnuts
- 4 slices whole grain bread
Method
- 1 In a small bowl, whisk together olive oil, vinegar, lime juice, sugar, salt, and pepper to make the vinaigrette.
- 2 In a large bowl, combine blueberries, cucumber, arugula, red onion, feta, and walnuts.
- 3 Pour the vinaigrette over the salad and toss gently to coat all ingredients evenly.
- 4 Toast the bread slices and cut them into four pieces to serve alongside the salad.
