Artichokes With Lemon Cheese Sauce

Ingredients

  • butter
  • salt and pepper

  • chopped parsley
  • grated cheese
  • lemon juice
  • egg yolks

Method

  1. 1 Remove hard leaves, cut points, skin stalks, and divide artichokes into 4 or 6 parts.
  2. 2 Cook artichokes in butter with salt and pepper, shaking pan until butter is absorbed.
  3. 3 Add broth to complete cooking, then remove artichokes.
  4. 4 Simmer remaining gravy with parsley, cheese, lemon juice, salt, and pepper.
  5. 5 Remove from heat, stir in egg yolks, add more broth to loosen sauce, and return artichokes to heat before serving.
