Artichokes With Lemon Cheese Sauce
Ingredients
- artichokes
- butter
- salt and pepper
- broth
- chopped parsley
- grated cheese
- lemon juice
- egg yolks
Method
- 1 Remove hard leaves, cut points, skin stalks, and divide artichokes into 4 or 6 parts.
- 2 Cook artichokes in butter with salt and pepper, shaking pan until butter is absorbed.
- 3 Add broth to complete cooking, then remove artichokes.
- 4 Simmer remaining gravy with parsley, cheese, lemon juice, salt, and pepper.
- 5 Remove from heat, stir in egg yolks, add more broth to loosen sauce, and return artichokes to heat before serving.
