Artichoke Vinaigrette Salad
Ingredients
- 1 cold boiled artichoke, quartered
- 1 tsp sugar
- ½ tsp salt
- ½ tsp paprika
- ½ tsp mustard
- Juice of ½ lemon (or 2 tbsp vinegar)
- 5 tbsp salad oil
- 1 tbsp grated onion
- Lettuce leaves for serving
- Finely chopped pimento for garnish
Method
- 1 In a deep bowl, combine sugar, salt, paprika, mustard, lemon juice (or vinegar), and salad oil.
- 2 Beat the mixture thoroughly until well blended.
- 3 Stir in the grated onion until fully incorporated.
- 4 Arrange the artichoke quarters in a nest of lettuce leaves.
- 5 Pour the dressing over the artichoke and garnish with chopped pimento.
