Artichoke Vinaigrette Salad

Ingredients

  • 1 cold boiled artichoke, quartered
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp mustard
  • Juice of ½ lemon (or 2 tbsp vinegar)
  • 5 tbsp salad oil
  • 1 tbsp grated onion
  • Lettuce leaves for serving
  • Finely chopped pimento for garnish

Method

  1. 1 In a deep bowl, combine sugar, salt, paprika, mustard, lemon juice (or vinegar), and salad oil.
  2. 2 Beat the mixture thoroughly until well blended.
  3. 3 Stir in the grated onion until fully incorporated.
  4. 4 Arrange the artichoke quarters in a nest of lettuce leaves.
  5. 5 Pour the dressing over the artichoke and garnish with chopped pimento.
