Artichoke And Tomato Salad With Tarragon Vinaigrette
Ingredients
- boiled artichoke bottoms, sliced
- tomatoes, sliced
- olive oil
- vinegar
- tarragon
- chervil
- salt
- pepper
- mustard
Method
- 1 Slice the under part of boiled artichokes and an equal number of tomato slices.
- 2 Dip both artichoke and tomato slices into a dressing made of olive oil, vinegar, tarragon, chervil, salt, pepper, and a little mustard.
- 3 Arrange the dressed slices in a salad bowl.
- 4 Pour the remaining dressing over the salad and serve.
