Argentine Chimichurri Sauce

Ingredients

  • 1 cup flat-leaf parsley, lightly packed and chopped without stalks
  • 4 garlic cloves, minced
  • 1/8 teaspoon salt
  • 1/4 teaspoon freshly ground peppercorns
  • 1/2 teaspoon chili pepper flakes
  • 1 tablespoon dried oregano
  • 2 tablespoons green onion, minced
  • 3/4 cup olive oil
  • 3 tablespoons vinegar
  • 1/4 cup fresh lemon juice
  • water

Method

  1. 1 Place all ingredients except water in a blender or food processor.
  2. 2 Pulse until well chopped but not pureed, adding water if needed for consistency.
  3. 3 Spoon over grilled meats, poultry, seafood, or vegetables, or use as a marinade.
