Apricots With Whipped Cream And Nut Brittle

Ingredients

  • 1 can apricots
  • syrup from apricots
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • Few grains salt
  • Nut brittle, divided

Method

  1. 1 Drain the apricots, reserving the syrup. Cook the syrup for 10 minutes.
  2. 2 Add the apricots to the syrup and cook for 3 to 5 minutes until tender. Cool the mixture.
  3. 3 Pour the cooled apricots into a serving dish and sprinkle with half of the nut brittle.
  4. 4 Beat the cream until stiff peaks form. Slowly add sugar, vanilla, and salt, mixing until combined.
  5. 5 Pile the whipped cream on top of the apricots. Sprinkle with the remaining nut brittle and serve cold.
