Apricots With Whipped Cream And Nut Brittle
Ingredients
- 1 can apricots
- syrup from apricots
- 1/2 cup heavy cream
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- Few grains salt
- Nut brittle, divided
Method
- 1 Drain the apricots, reserving the syrup. Cook the syrup for 10 minutes.
- 2 Add the apricots to the syrup and cook for 3 to 5 minutes until tender. Cool the mixture.
- 3 Pour the cooled apricots into a serving dish and sprinkle with half of the nut brittle.
- 4 Beat the cream until stiff peaks form. Slowly add sugar, vanilla, and salt, mixing until combined.
- 5 Pile the whipped cream on top of the apricots. Sprinkle with the remaining nut brittle and serve cold.
