Apricot Souffle

Ingredients

  • 6 egg whites
  • 3 tablespoons apricot jam
  • Sugar to taste (if using dried apricots)

Method

  1. 1 Beat the egg whites stiffly.
  2. 2 Mix the apricot jam (or stewed apricot puree) into the beaten whites with a fork.
  3. 3 Butter a dish, mound the mixture in a pyramid shape, and bake in a moderate oven (350°F) for 15 minutes.
  4. 4 Remove from oven and powder with sugar before serving.
