Apricot Souffle
Ingredients
- 6 egg whites
- 3 tablespoons apricot jam
- Sugar to taste (if using dried apricots)
Method
- 1 Beat the egg whites stiffly.
- 2 Mix the apricot jam (or stewed apricot puree) into the beaten whites with a fork.
- 3 Butter a dish, mound the mixture in a pyramid shape, and bake in a moderate oven (350°F) for 15 minutes.
- 4 Remove from oven and powder with sugar before serving.
