Apricot Sherbet

Ingredients

  • 1 cup peeled apricots
  • syrup to taste
  • 2 cups water
  • 1-2 egg whites (unbeaten)

Method

  1. 1 Rub peeled apricots through a sieve to make 1 cup of puree.
  2. 2 Sweeten the puree with syrup and stir in 2 cups of water.
  3. 3 Optionally fold in the whites of 1 or 2 unbeaten eggs.
  4. 4 Freeze the mixture in an ice cream maker according to manufacturer instructions.
