Apricot Sherbet
Ingredients
- 1 cup peeled apricots
- syrup to taste
- 2 cups water
- 1-2 egg whites (unbeaten)
Method
- 1 Rub peeled apricots through a sieve to make 1 cup of puree.
- 2 Sweeten the puree with syrup and stir in 2 cups of water.
- 3 Optionally fold in the whites of 1 or 2 unbeaten eggs.
- 4 Freeze the mixture in an ice cream maker according to manufacturer instructions.
