Apricot Rice Fritters
Ingredients
- 6 oz rice
- 1 pint milk
- 8 oz sugar
- 1 oz fresh butter
- 6 oz apricot marmalade
- 3 eggs
- batter for dipping
- sifted sugar for garnish
Method
- 1 Cook rice in milk, butter, and sugar over low heat for 30 minutes until tender. Strain off excess milk.
- 2 Stir in apricot marmalade and beaten eggs. Cook over heat, stirring constantly, until the mixture thickens and eggs are set.
- 3 Spread the mixture onto a dish to a thickness of 1/2 inch. Allow it to cool completely.
- 4 Cut the cooled rice mixture into long strips. Dip each strip in batter and fry in oil until golden brown.
- 5 Remove from oil, drain, and sprinkle with sifted sugar before serving.
