Apricot Plum Jam With Almond Flavor
Ingredients
- 1 lb apricots and plums, stoned
- ½ cup water
- 1 lb granulated sugar
- Apricot kernels
- ½ oz bitter almonds, blanched
Method
- 1 Place stoned fruit in a preserving pan with water and heat until scalded.
- 2 Rub the fruit through a sieve to create a smooth pulp.
- 3 Add sugar to the pulp and return to a brisk fire.
- 4 Bring to a boil, skimming well, then add apricot kernels and blanched bitter almonds.
- 5 Boil rapidly for 15 minutes, stirring constantly.
