Apricot Plum Jam With Almond Flavor

Ingredients

  • 1 lb apricots and plums, stoned
  • ½ cup water
  • 1 lb granulated sugar
  • Apricot kernels
  • ½ oz bitter almonds, blanched

Method

  1. 1 Place stoned fruit in a preserving pan with water and heat until scalded.
  2. 2 Rub the fruit through a sieve to create a smooth pulp.
  3. 3 Add sugar to the pulp and return to a brisk fire.
  4. 4 Bring to a boil, skimming well, then add apricot kernels and blanched bitter almonds.
  5. 5 Boil rapidly for 15 minutes, stirring constantly.
