Apricot Layer Cake
Ingredients
- 3 cups flour
- 2 tsp baking powder
- 0.5 tsp salt
- 0.5 cup butter
- 1 egg
- 1 cup cold water
- White granulated sugar for sprinkling
- Apricots, mashed and sweetened
Method
- 1 Sift together flour, baking powder, and salt.
- 2 Cut in butter until mixture resembles coarse crumbs.
- 3 Stir in egg and cold water slowly to form a soft dough.
- 4 Divide dough in half and press into square pans.
- 5 Sprinkle tops with sugar and bake for 10-15 minutes.
- 6 Mash and sweeten apricots, then spread between and on top of baked layers.
