Apricot Layer Cake

Ingredients

  • 3 cups flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup butter
  • 1 egg
  • 1 cup cold water
  • White granulated sugar for sprinkling
  • Apricots, mashed and sweetened

Method

  1. 1 Sift together flour, baking powder, and salt.
  2. 2 Cut in butter until mixture resembles coarse crumbs.
  3. 3 Stir in egg and cold water slowly to form a soft dough.
  4. 4 Divide dough in half and press into square pans.
  5. 5 Sprinkle tops with sugar and bake for 10-15 minutes.
  6. 6 Mash and sweeten apricots, then spread between and on top of baked layers.
