Apricot Layer Cake With Meringue
Ingredients
- 1/2 cup sugar
- 4 tablespoons shortening
- 1 egg yolk
- 4 tablespoons water
- 1 cup flour
- 2 teaspoons baking powder
- Cooked apricots
- 1 egg white
- 1/2 cup jelly
Method
- 1 Cream sugar, shortening, and egg yolk until light and frothy.
- 2 Add water, flour, and baking powder; beat to mix thoroughly.
- 3 Pour into a well-greased layer cake pan and bake for 20 minutes in a moderate oven (350°F).
- 4 Split the cake and fill with cooked apricots.
- 5 Beat egg white and jelly until stiff meringue forms; pile on top and garnish with an apricot.
