Apricot Jam Tarts With Whipped Cream

Ingredients

  • 2 cups flour
  • 1/2 cup Crisco
  • 4 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • Apricot jam or jelly
  • Whipped cream
  • Angelica
  • Preserved cherries

Method

  1. 1 Rub Crisco into flour, then add salt, sugar, baking powder, egg, and vanilla. Mix well with a fork.
  2. 2 Roll out the dough, cut into rounds, and line greased tartlet tins. Line with paper and fill with rice or peas to prevent rising.
  3. 3 Bake in a hot oven (425°F) for 20 minutes. Remove the rice and paper liners.
  4. 4 Once pastries are cold, fill each with a spoonful of apricot jam or jelly.
  5. 5 Top with whipped cream and decorate with angelica and preserved cherries.
