Apricot Jam Tarts With Whipped Cream
Ingredients
- 2 cups flour
- 1/2 cup Crisco
- 4 tablespoons sugar
- 1/2 teaspoon salt
- 1 egg
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- Apricot jam or jelly
- Whipped cream
- Angelica
- Preserved cherries
Method
- 1 Rub Crisco into flour, then add salt, sugar, baking powder, egg, and vanilla. Mix well with a fork.
- 2 Roll out the dough, cut into rounds, and line greased tartlet tins. Line with paper and fill with rice or peas to prevent rising.
- 3 Bake in a hot oven (425°F) for 20 minutes. Remove the rice and paper liners.
- 4 Once pastries are cold, fill each with a spoonful of apricot jam or jelly.
- 5 Top with whipped cream and decorate with angelica and preserved cherries.
