Apricot And Lemon Sponge Cake
Ingredients
- Butter for greasing
- Cracker flour for dusting
- 1 layer of apricots or peaches
- 4 eggs
- 1 cup powdered sugar
- 1 cup flour
- Juice of 1 lime or lemon
- 1 teaspoon vanilla
- Pinch of salt
Method
- 1 Butter a pan thoroughly and dust with cracker flour. Arrange a single row of apricots or peaches on the bottom.
- 2 Beat 4 eggs with 1 cup powdered sugar. Place the bowl over a pan of boiling water and beat for 20 minutes.
- 3 Remove from heat and stir in 1 cup flour, lime or lemon juice, vanilla, and a pinch of salt until combined.
- 4 Pour the mixture over the fruit in the prepared pan. Bake for 45 minutes.
