  • 1 lb sugar
  • Kernels from apricot stones
  • White currant jelly (optional, for tartness)

Method

  1. 1 Peel apricots, remove stones, crack stones, and blanch kernels.
  2. 2 Boil sugar with a little water until it reaches a strong thread consistency.
  3. 3 Add apricots to the sugar syrup and boil briskly until fruit breaks down.
  4. 4 Remove from heat, mash the fruit, and stir in the blanched kernels.
  5. 5 Add white currant jelly if desired to balance sweetness, then pot.
