Apricot And Almond Jam
Ingredients
- 1 lb apricots
- 1 lb sugar
- Kernels from apricot stones
- White currant jelly (optional, for tartness)
Method
- 1 Peel apricots, remove stones, crack stones, and blanch kernels.
- 2 Boil sugar with a little water until it reaches a strong thread consistency.
- 3 Add apricots to the sugar syrup and boil briskly until fruit breaks down.
- 4 Remove from heat, mash the fruit, and stir in the blanched kernels.
- 5 Add white currant jelly if desired to balance sweetness, then pot.
