Applesauce Raisin Cookies
Ingredients
- 1 cup sugar
- 1/2 cup margarine (or butter or shortening)
- 2 eggs
- 2 teaspoons baking soda
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups unsweetened applesauce
- 1 cup raisins
- 1 cup nuts (optional)
Method
- 1 Preheat oven to 350°F. Grease a baking sheet.
- 2 Cream together sugar, fat, and egg in a large bowl.
- 3 In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- 4 Stir the dry ingredients into the wet mixture until just moistened.
- 5 Fold in applesauce, raisins, and nuts if using.
- 6 Drop dough by heaping teaspoons onto the prepared sheet. Bake for 10-12 minutes.
