Applesauce Buttermilk Cornbread

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup low-fat buttermilk
  • 1/2 cup unsweetened applesauce
  • 4 egg whites
  • 2 tablespoons vegetable oil

Method

  1. 1 Preheat oven to 400°F. Lightly spray an 8-inch square pan with cooking spray.
  2. 2 Mix cornmeal, flour, sugar, baking powder, and salt in a medium bowl.
  3. 3 Add buttermilk, applesauce, egg whites, and oil; mix well by hand.
  4. 4 Pour batter into the pan and shake to level.
  5. 5 Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean.
