Applesauce Buttermilk Cornbread
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup low-fat buttermilk
- 1/2 cup unsweetened applesauce
- 4 egg whites
- 2 tablespoons vegetable oil
Method
- 1 Preheat oven to 400°F. Lightly spray an 8-inch square pan with cooking spray.
- 2 Mix cornmeal, flour, sugar, baking powder, and salt in a medium bowl.
- 3 Add buttermilk, applesauce, egg whites, and oil; mix well by hand.
- 4 Pour batter into the pan and shake to level.
- 5 Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean.
- 6 Allow to cool, then cut into 12 squares.
