Apple Walnut Raisin Bread
Ingredients
- 1/2 cup walnuts, chopped
- 1 1/2 cups applesauce
- 1 egg
- 1 cup sugar
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup raisins
Method
- 1 Preheat oven to 350°F. Grease two 8x4x2 inch loaf pans.
- 2 Toast walnuts in a skillet over medium-low heat for 5-7 minutes until brown and fragrant. Set aside to cool.
- 3 In a large bowl, mix applesauce, egg, sugar, oil, and vanilla.
- 4 In a separate bowl, whisk flour, baking soda, cinnamon, and nutmeg.
- 5 Combine wet and dry ingredients, then stir in raisins and cooled walnuts.
- 6 Divide batter evenly between pans. Bake 45-55 minutes. Cool in pans 10 minutes, then transfer to wire racks.
