Apple Walnut Raisin Bread

Ingredients

  • 1/2 cup walnuts, chopped
  • 1 1/2 cups applesauce
  • 1 egg
  • 1 cup sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup raisins

Method

  1. 1 Preheat oven to 350°F. Grease two 8x4x2 inch loaf pans.
  2. 2 Toast walnuts in a skillet over medium-low heat for 5-7 minutes until brown and fragrant. Set aside to cool.
  3. 3 In a large bowl, mix applesauce, egg, sugar, oil, and vanilla.
  4. 4 In a separate bowl, whisk flour, baking soda, cinnamon, and nutmeg.
  5. 5 Combine wet and dry ingredients, then stir in raisins and cooled walnuts.
  6. 6 Divide batter evenly between pans. Bake 45-55 minutes. Cool in pans 10 minutes, then transfer to wire racks.
