Apple Tart With Currants And Almonds
Ingredients
- 2 lbs apples
- 1 cup currants
- 1 cup sultanas
- 2 oz chopped almonds
- Sugar to taste
- 1 tsp ground cinnamon
- Zest of 1/2 lemon
- 12 oz fine wheatmeal
- 4.5 oz butter
- Water (for dough)
- 1 egg white (beaten)
Method
- 1 Pare, core, and chop apples. Stew in a small amount of water until nearly tender.
- 2 Add currants, sultanas, almonds, cinnamon, lemon zest, and sugar. Simmer until apples form a pulp. Cool completely.
- 3 Mix wheatmeal, butter, and a little water to form a paste. Roll out and line a round, flat dish.
- 4 Brush the pastry base with beaten egg white. Spread the cooled apple mixture over the base.
- 5 Cut remaining paste into 3/8-inch strips. Lay them over the filling in a diamond trellis pattern, 1 inch apart.
- 6 Trim edges with remaining strips and crimp with a fork. Bake at 350°F for 45 minutes. Serve with custard.
