Apple Soufflé
Ingredients
- 4 eggs
- 4 apples
- 2 oz castor sugar (or more if apples are very sour)
- ½ cup new milk or half milk and half cream
- 1 oz Allinson cornflour
- juice of 1 lemon
Method
- 1 Pare, cut up, and stew the apples with the sugar and lemon juice until reduced to a pulp.
- 2 Beat the apple mixture smooth and return it to the stewpan.
- 3 Smooth the cornflour with the milk, mix it with the apples, and stir until it boils.
- 4 Turn the mixture into a basin to cool.
- 5 Separate the eggs; beat the yolks well and mix them with the cooled apple mixture.
- 6 Whisk the egg whites to a stiff froth and mix them lightly with the rest.
- 7 Pour the whole into a buttered soufflé tin.
- 8 Bake for 20 minutes in a moderately hot oven (425°F) and serve at once.
