Apple Soufflé

Ingredients

  • 4 eggs
  • 4 apples
  • 2 oz castor sugar (or more if apples are very sour)
  • ½ cup new milk or half milk and half cream
  • 1 oz Allinson cornflour
  • juice of 1 lemon

Method

  1. 1 Pare, cut up, and stew the apples with the sugar and lemon juice until reduced to a pulp.
  2. 2 Beat the apple mixture smooth and return it to the stewpan.
  3. 3 Smooth the cornflour with the milk, mix it with the apples, and stir until it boils.
  4. 4 Turn the mixture into a basin to cool.
  5. 5 Separate the eggs; beat the yolks well and mix them with the cooled apple mixture.
  6. 6 Whisk the egg whites to a stiff froth and mix them lightly with the rest.
  7. 7 Pour the whole into a buttered soufflé tin.
  8. 8 Bake for 20 minutes in a moderately hot oven (425°F) and serve at once.
